From Indian Every Day by Anjum Anand

Serves 4-5

Ingredients:

400ml low-fat yoghurt, chilled and whisked
13cm piece of cucumber, peeled, coarsely grated and squeezed of all excess moisture
3 tbsp fresh mint, shredded
½ tsp roasted cumin powder
½ tsp red chilli powder
salt and freshly ground black pepper to taste
extra fresh mint leaves to garnish

Method:

Whisk together all the ingredients and serve chilled, garnished with a few mint leaves.
