Ingredients:
5 spray(s) Cooking Spray, Calorie Controlled
2 medium Onion, All Types, peeled and chopped
2 clove(s) Garlic, finely chopped
2 portion(s) (medium) Potato(es), Raw, peeled and chopped
1 tsp (level) Coriander, Dried, seeds
180 g Spinach, bag baby spinach
1200 ml Stock, Fresh, vegetable
2 tbsp Coriander, Fresh, a small bunch, roughly chopped
1 pinch Salt
1/4 tsp Black pepper
Method:
1.Spray a large saucepan with cooking spray and stir-fry the onions, potatoes and garlic with the ground coriander for a few minutes then add a couple of tablespoons of water, turn the heat down to a minimum and cover the pan.
2.Leave to sweat for 15 mins, until the onions are soft.
3.Add the spinach, coriander and stock and cook for a further 10 mins. Liquidise the soup and check the seasoning before serving. If you are wheat or yeast intolerant, for a fresh stock recipe.
