Field Salad with Snow Peas, Grapes & Goat’s Cheese

Adapted from a recipe in “From Wine, Food & Friends” by Karen MacNeil

Serves 6

Ingredients:

5 tbsp balsamic vinegar
5 tbsp fresh orange juice
2 tbsp extra virgin olive oil
2 ½ tsp sugar
½ tsp salt
¼ tsp freshly ground black pepper
8 cups gourmet salad greens
2 cups snow peas, trimmed and cut lengthwise into thin strips
2 cups seedless red grapes, halved
½ cup crumbled fetta cheese (or Goat’s Cheese)

Method:

1.Combine first 6 ingredients in a small bowl, stir well with a whisk. Combine remaining ingredients in a large bowl. Drizzle dressing over salad, toss well.

La Femme
I don’t find Fetta to be a very wine-friendly cheese (well not for the wines chosen on this particular occasion at least) so I swapped it for Goat’s cheese.

Wine Matching
My wine club theme this month was all things fruity so the grapes in this salad were an added bonus.  I thought they may well compliment the expected grapey aromas and flavour of the Prosecco.  Goat’s cheese is such a wine-friendly cheese that of course it went well with most of the wines we sampled this month.
